The reigning 2015 Memphis in May World Grand Champions, The Shed BBQ & Blues Joint struck out to defend even another World Championship title at the World Food Championships held in Kissimmee, Florida. Defending their 2014 Brisket World Championship ranking The Shed nailed it again, now sporting two major World Championships for 2015.
The World Food Championship is the largest competition in food sport, where champions of previous events convene, for a chance at winning the ultimate food crown and a share of $300,000. This year The Shed faced off, toe to toe, with 68 reigning Grand Champions from across the country and international teams.
The World Food Championships platform ranges from live-event integration and activations to a robust multimedia platform that serves culinary stars, home cooks, brands and destinations. In three short years, WFC has awarded more than $1 million in prizes and money, spawned a TV series, garnered more than 5 billion media impressions and launched numerous professional careers for successful contestants.
Another Mississippi based World Grand Champion, Mark Lambert, Sweet Swine O Mine/Team Compart carries yet another World Champion title in Pork home to Olive Branch, MS. Both The Shed and Team Compart ranked in an ancillary division of alligator with 2nd and 3rd places.
Prep Time: 45 min
Cook Time: 20 -40 min ( depending on size of meatball )
Serves: 4 – 6
- 3/4 lb Ground Beef
- 1/4 lb Ground Pork
- 1 lb Bacon
- 3-4 Fresh Minced Jalapenos
- Small sweet onion minced
- 1/3c your favorite The Shed BBQ Sauce ( We recommend The Original Spicy Sweet )
- Rack Attack ( found in Bass Pro Shop Nationwide or Order online at TheShedBBQ.com ) to taste
- Pepper Jack Cheese
- 8 – 12 Skewers
- Soak Skewers 30 minutes
- Heat grill
- Mix well make 3oz palm size balls, stuff with a cube of pepper jack cheese
- Wrap with Bacon
- Skewer then Grill on Medium/High Heat 15-20 minutes. Or until meat is cooked through.
- Rotate to crisp on all sides.
- Baste with Shed BBQ Sauce
- Soak wooden skewers in water to prevent burning, use two per pop to make it easier to rotate.
- We prefer to use a thin more meaty bacon.
- Add red pepper flakes or substitute Habaneros or Ghost Pepper to kick the HEAT into overtime!
- When wrapping the meatball with bacon, rotate a quarter turn on each roll to cover evenly & tightly. You will be a bacon wrapping pro in no time!

The Biloxi Shuckers, Ovations Food Services and The Shed BBQ Blues Joint have announced today a partnership at MGM Park. The Shed will open two locations at the Park serving all Minor League baseball games and other events held at the Park. The Shed will bring their World Championship, Award Winning barbeque, coupled with their internationally distributed sauces to the MGM Park. The Ocean Springs, MS based Shed BBQ & Blues Joint will be bringing the Memphis in May International World Grand Championship, along with their First Place Whole Hog World Championship trophies and $29,000 home to South Co-owners Brad Orrison, sister Brooke Lewis and The Shed’s competition team, led by Senior Pit Master Hobson Cherry, have been competing in the whole Hog division of Memphis in May World Championship for 10 years. Over the years bringing home many wins, including first places in beef, poultry and exotic. Their climb to the World Grand Championship has been a steady process by placing in the top 10 every year, with the exception of 2012 when their business burned to the ground. Coming back in 2013 to win First place World championship in Whole Hog. This year The Shed trumped them all by nabbing the illusive Grand Championship. One secret The Shed shared that brought them to the 2015 Grand Championship is the use of their own brand of BBQ sauces, The Shed’s Sweet Southern and Spicy Vinegar. These two sauces, plus other ingredients, were injected into the hog prior to the 22 hour low and slow cook. These sauces are on grocery shelves nationwide. Lewis also hails the fact that “We do it the old fashion way with a wood and charcoal smoker. It’s a lot more work than the propane smokers on the market today, and there are some fine ones out there, but we prefer the old stick burner method of stoking the fire and using a variety of woods to instill as much flavor as possible.” Brad also commented on the use of a 90 gallon water tank that runs under the smoker filled with aromatics to “flavor the steam’ in the cooker. Joining The Shed on stage going toe to toe for the Grand Championship were World Champions Chris Lilly from Big Bob Gibson’s, Decatur, Alabama and Serial Grillers, Memphis, TN Salty Rinse BBQ from New York City took home second place in the Whole Hog Division and Cotton Patch Cooking Team from Columbus, Mississippi took third.
